Cookie Dough Brownies Your Family Will Love

Cookie Dough Brownies are something I have been making for many years. The first time I made them our kids were very small and I would bake things for Matt to take to work. One of the guys that worked with him said that the Cookie Dough Brownies were his favorite and every time he wanted to start a diet, I would send a batch to work with Matt. 🙂

Every birthday we have in our house, I always ask what they want for dinner and what cake/dessert they want me to make. This year, Landen chose Cookie Dough Brownies for his dessert. I love when our kids remember something I have made and ask for it on their birthday. Every time I hear what they choose for their special day makes me so happy because those are the foods I have made that have been a part of their childhood and that they will always remember. When they have kids, they will be talking about their favorite dinners and desserts and to know that I am the one that made them makes me smile.

Ingredients For Cookie Dough Brownies:

Box of brownie mix

Cookie dough layer:

1/2 c. butter, softened

1/4 c. sugar

1/3 c. brown sugar

2 T milk

3/4 c. flour

1/2 c. chocolate chips 

Topping:

  1 T vegetable/canola oil 

1 c. – 1 1/2 c. chocolate chips

Candy for topping (optional)

Directions For Cookie Dough Brownies:

Make the brownies according to the directions on the box. Sometimes, I add 1/2 c. chocolate chips to the brownies, but you don’t have to. Let the brownies cool. 

Cookie dough layer: Combine all the ingredients together and mix until well incorporated. Spread the cookie dough on top of the cooled brownies. 

Topping: Put the chocolate chips and the oil in a microwave-safe bowl and stir them. Heat them in the microwave on high in 30-second increments, stirring after every increment until the chocolate chips are melted and smooth. Usually it takes around 1 1/2 minutes total.

Spread the melted chocolate chips over the cookie dough layer. Add candy if you wish. Put in refrigerator to set. 

We store the brownies in the fridge. You can take them out of the fridge 30 minutes before you serve them so they are room temperature. Landen wanted whip cream for the top of them so that is what we had for this birthday, but you could also serve them with ice cream. To be honest, they don’t need either. 🙂
