I am back today to share an easy Roasted Spicy Salsa Recipe that uses the vegetables that you are growing in your summer garden!

One of our favorite things about summer is all of the vegetables we grow. Specifically the veggies we grow that can make homemade salsa. There is nothing better than homemade salsa. We eat it all summer long. I need to freeze some this year so we can enjoy it all year round. 

For this Roasted Spicy Salsa Recipe, I tried something a little different. I added new veggies and I prepared it differently than I do with my 3 ingredient salsa.

For this Roasted Spicy Salsa Recipe, I set up my “cooking station” outside. I brought the small grill we have to the table and started the coals.

The easiest way to start the coals in the little grill is with HomeRight’s ElectroLight. I love this thing. I always feel confident when I use it.

Once the coals were very hot, it was time to start roasting the vegetables.

This Roasted Spicy Salsa Recipe is anything you want to make it. The kids and I picked vegetables from our garden that we thought would be great roasted in this salsa. You can add any vegetables you want.

This is what I used:

  • Zucchini
  • Tomatoes
  • Small peppers
  • Jalapenos
  • Onions

I placed all of these vegetables on the grill.

Once the vegetables started to get charred on one side, I flipped them over.

When all the vegetables had great grill marks, I took them off the grill and into the house.

I removed the skins from the jalapenos, peppers and tomatoes. I cut the ends off all the vegetables and cut them into smaller pieces. I added them all to my food processor and pulsed until they were the consistency I wanted.

I strained the Roasted Spicy Salsa Recipe to get rid of any excess liquid and then put it in a bowl to serve.

We love blue corn chips, but this salsa would be great with bread, pita chips or your favorite tortilla chips.

The Roasted Spicy Salsa Recipe can be served warm right from the grill or put it in the fridge and serve it cold.

This salsa was a great change for the original salsa. Like I said earlier, put whatever vegetables in it that you are growing in your summer garden. You can’t mess this up. You can adjust the vegetables based on what your family likes.
