Easy Blueberry Cobbler
Preheat the oven to 350°.
Put the butter and the oil in your cast iron skillet (I used an 11.5" skillet).
Put the skillet in the oven as it is preheating so the butter melts.
Meanwhile, mix the flour, baking powder and salt in a bowl.
Add the milk, honey and vanilla.
Once the butter has melted, remove the skillet from the oven and pour the melted butter and oil into the flour mixture. Mix together.
Return the batter to the skillet and sprinkle with the blueberries.
Bake until golden brown (about 30-35 minutes).
I usually cut it into pie slices and sprinkle it with powdered sugar, but it is best served warm with vanilla ice cream on top.
