Easy Blueberry Cobbler


  • 1/4 c. butter
  • 1/4 c. vegetable oil
  • 1 c. flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 c. milk
  • 1/3 c. honey
  • 2 tsp. vanilla extract
  • 3 c. fresh blueberries


  • Preheat the oven to 350°. 
  • Put the butter and the oil in your cast iron skillet (I used an 11.5" skillet).
  • Put the skillet in the oven as it is preheating so the butter melts. 
  • Meanwhile, mix the flour, baking powder and salt in a bowl. 
  • Add the milk, honey and vanilla.
  • Once the butter has melted, remove the skillet from the oven and pour the melted butter and oil into the flour mixture. Mix together. 
  • Return the batter to the skillet and sprinkle with the blueberries.
  • Bake until golden brown (about 30-35 minutes). 


I usually cut it into pie slices and sprinkle it with powdered sugar, but it is best served warm with vanilla ice cream on top.
