Zesty Sausage Cream Cheese Dip

  • 1 pkg. spicy pork sausage
  • 1 can RO*TEL diced tomatoes (I use the one that has green chilies in it)
  • Medium chopped onion
  • 1 chopped red bell pepper
  • 1/2 c. chopped jarred jalapeno peppers (or more if you like)
  • 2 packages 8 oz cream cheese (cubed)
  • ½ cup chopped peppercinis (or more if you like)
  • PAM spray
  • Tortilla chips, baguette or crackers for serving
  1. Cook the sausage, onion and red pepper in large cast iron skillet over medium heat until sausage is cooked through and the vegetables are tender.
  2. I drain the mixture and spray the skillet with a little PAM (this helps with cleaning the skillet when it is all said and done).
  3. Then, I return the drained sausage and vegetable mixture back to the skillet.
  4. Next, I add the RO*TEL diced tomatoes, chopped jalapenos, chopped peppercinis and the cream cheese to the skillet and mix it as well as I can.
  5. I cook it on the stove for about 5 minutes until the cream cheese is melted and everything is incorporated well.
  6. Then I put it under the broiler for about 5-8 minutes, until it is bubbly.
  7. I pull it out of the oven and serve it right in the cast iron skillet.
  8. We have served this Zesty Sausage Cream Cheese Dip with tortilla chips, baguettes and crackers.

I serve other recipes this way too. The Rustic Blueberry Cobbler I posted a few months ago is so yummy served right from the skillet.

You can easily find the RO*TEL diced tomatoes near the tomato sauce at Walmart.

Like I said earlier, you really can customize this recipe to what you like. If you like things spicy, add more peppers. If you don’t like a lot of heat, cut back on how many you put in. You can’t mess it up.

This recipe makes a big portion so if you aren’t having many people over, cut the ingredients in half and make a smaller batch.
